• 2 cup Greek yogurt
• ½ English cucumber, seeded and chopped
• 2 cloves garlic, minced
• 1 tablespoon EVOO
• 1 tablespoon lemon juice
• 2 tablespoons fresh dill, chopped
• Salt and pepper to taste
Preparation
• Place the chopped or grated cucumber in a fine mesh strainer and press to remove excess moisture.
• In a medium bowl, combine the Greek yogurt, cucumber, minced garlic, olive oil, lemon juice, and chopped dill.
• Mix until well combined.
• Season with salt and pepper to taste.
• Cover and refrigerate for at least one hour before serving to allow the flavors to meld together.

• Use as a sauce for grilled meats or fish.
