🍁 Fall’s Sweet and Tangy Secret: The Maple-Vinaigrette
Ingredients
- 1/2 cup apple cider vinegar (Bragg’s)
- 2 teaspoons Dijon mustard
- 1/4 – 1/2 cup pure maple syrup (depending on sweetness)
- 1 cup light olive oil
- Salt and freshly ground black pepper to taste
Directions:
Add all ingredients to a jar or bowl mix with a whisk, shake in a jar or use a hand blender. You can store it in a closed container in the refrigerator for a week to be used as needed. Keep in mind to take it out of the refrigerator prior to using it as the oil may solidify over time.
As the air turns crisp and the leaves ignite in color, our plates call for flavors that are equally warm and comforting. Enter the Maple-ACV Vinaigrette—a dressing that perfectly captures the essence of the season.
🍎 The Star Players
This vinaigrette relies on the powerful pairing of Bragg’s Organic Apple Cider Vinegar (ACV) and pure maple syrup.
• Bragg’s ACV Flavor: Bragg’s ACV, famous for including the “Mother” (strands of proteins, enzymes, and friendly bacteria), provides a wonderfully tart, fruity tang. It’s slightly less harsh than white vinegar, carrying a noticeable, rustic apple note that is inherently autumnal.
• Maple Syrup’s Flavor: Pure maple syrup adds a deep, complex caramelized sweetness that is much richer than plain sugar or honey. It imparts a subtle woodsy warmth that perfectly complements the apple notes of the vinegar.
Together, they create a beautiful sweet-and-sour balance that is both invigorating and grounding.
🥗 A Versatile Fall Workhorse
This vinaigrette is your new best friend for all things fall:
• Salads: It’s phenomenal on hearty fall salads featuring ingredients like roasted butternut squash, pecans, goat cheese, dried cranberries, and mixed greens (especially arugula or baby spinach).
• Roasting: Use it as a marinade or a finishing glaze for roasted root vegetables like carrots, Brussels sprouts, or sweet potatoes to give them a tangy, sweet crust.
• Grains: Drizzle it over warm grain bowls with quinoa or farro for a boost of flavor.
